Job description: Private Chef + Holistic Health Coach

Favorite dish to serve at a dinner party: For dinner parties I like to do elevated twists of crowd favorites that can easily be customized based on personal preferences or dietary restrictions. My favorite dinner parties have a lot of components on the table that guests can try and pass around to each other. It feels very familial. For example, everyone loves tacos! They are healthy, full of flavor, have multiple cooking methods and highlight whatever is in season. Whether you’re vegan, vegetarian, food combining, or carnivoring, I’ll have a variety of accoutrements on the table so that no one will feel like they are missing out.

Favorite skin food ingredient and why: I am obsessed with water. When I lived in San Francisco I would carry my 2L water bottle with me everywhere I walked and would fill it up multiple times a day. I look a lot younger than I am and really credit this to my water intake. I also use olive oil for my body moisturizer. It’s essential here in Denver and doesn’t irritate my skin.

Top three Instagram accounts for inspiration:

@brittanyjoneslife: She was the owner of a popular hair salon here in Denver but left everything to live on her sailboat with her husband and son in Key West. She does hair there now and is committed to sustainable, organic hair care.

@juaninakocher: Amazing momma and creator of Flex + Flow Wellness, a platform for streaming yoga and meditation. Her workouts are exactly what my body craves, and her voice is like butta.

@amyroselloyd: I learn something new from Amy almost every day. I have loved seeing her growth and think she is going to be very successful in the health space. She truly wants to help others, is very open and vulnerable, while also being a hustler.

Must-have cookbook: Jerusalem, Biba's Taste of Italy, and the Malibu Farm cookbooks all have pages released from their spines. They are very loved.

Top three kitchen supplies you can’t live without: A very sharp knife (I love Shuns), Teakhaus Large Professional Cutting Board, and a Vitamix.

Three things you always keep in your refrigerator:

Ginger purée for my morning lemon, ginger, and ACV warm water (I make a big batch in a Vitamix to save time!).

Seasonal fruit. I am obsessed with pomegranates, persimmons, figs, watermelon, tomatoes with Maldon, and cherries.

Lemons/limes

Favorite online shop for kitchen supplies and / or specialty food items: I purchase most of my big items from Williams Sonoma and WebstaurantStore. Anything specialty I like to find organically. I love getting lost on very long walks and will explore small boutiques or specialty stores along the way. I love seeing how the owners have curated their shops and am always happy to try new brands or products.

Go-to quick, healthy meal: A super crunchy, spicy, lemony, and garlicky salad with avocados so ripe that they turn into a creamy dressing while you toss the salad. I make a variation of this almost every day.

Favorite healthy treat: Seasonal fruit! I have a bottomless tummy for my favorites.

Skincare mantra: The ingredients you put in your body are just as important as the ones you use topically. Learn to read labels and use the highest quality ingredients you can get your hands on. Simple is the best.

Eat this recipe for: This is great as a snack or late-night treat.

Recipe: Chocolate and Coconut Protein Bars with holi (mane)

Ingredients:

0.5 cup Agent Nateur holi (mane)

1.0 cup gluten free old-fashioned oats

1.0 cup unsweetened coconut flakes

1.0 tsp salt

.25 cup + 1T honey, melted

0.5 cup crunchy nut butter (I used NuttZo Organic 7 Nut and Seed Butter)

9 oz chocolate chips (I used one bag of the HU Kitchen Baking Gems)

3T coconut oil, melted

1-2 pinches Maldon

Instructions:

In a large bowl, mix together the Agent Nateur holi (mane), old fashioned oats, unsweetened coconut flakes and salt.

In a small bowl combine the honey and nut butter.

Add the honey-nut butter mix mixture to the dry ingredients, mixing well until they are totally combined. You may need to use your hands.

Pour this mixture into a 9x9 pan lined with parchment. Press down so that it is totally level.

Melt the chocolate chips and coconut oil together, then pour this onto the top of the bar. Stick in the fridge for a few hours, or overnight.

Once the chocolate topping has hardened, it’s time to slice. Release the bars from the pan, then using a sharp knife slice into your desired shapes.

Sprinkle with Maldon and serve. I like to keep some in my freezer when I would like a sweet treat.
