Eat this for: This recipe includes the sweet potato’s skin, which is great for skin cancer prevention. Orange foods also contain beta carotene, which fights aging. It’s also very high in fiber, so it’s excellent for digestion. Tahini has a lot of complex b vitamins that are good for the bones and the skin.
Time & Place: At dinner or in your car. Sweet potatoes are a compact unit and tahini is great for dipping. It’s a fun and healthy party in your car. Eat your sweet potato in between traffic.

SLOW ROASTED SWEET POTATOES WITH GREEN TAHINI
- 3 organic small sweet potatoes
- 2 tbsp avocado oil
- ½ bunch of parsley
- ½ bunch of cilantro
- 2 green onions
- 2 lemons
- 1 clove garlic
- 1 c tahini paste
- Salt to taste
- Cumin to taste
Preheat oven to 300°. Wash sweet potatoes and place on a foil-lined baking sheet. Rub with avocado oil and a generous pinch of salt. Bake for 2 to 2.5 hours until soft and caramelized. Turn oven on to broil and place potatoes onto broiler for 3 to 4 minutes.
GREEN TAHINI
Grate garlic into a mixing bowl. Add a pinch of salt and the juice of 2 lemons. Pour in tahini paste. Slowly whisk in ice water until a smooth sauce is formed and it has the consistency of maple syrup. Chop parsley, cilantro, and green onion and mix into tahini sauce. Drizzle over sweet potatoes.
