Recipe: Feel Good Honey Gingerbread Cookies
Ingredients:
- 170g Almond Flour
- 50g All Purpose Flour
- 50g Softened Butter
- 100g Organic Honey
- 1 Egg
- 1 tsp Baking Powder
- 1/3 tsp Salt
- 1.5-2 tsp Cinnamon
- 1/3 tsp Nutmeg
- 1/2 tsp Ground Ginger
- 1/3 tsp Cardamom
- 2 scoops of holi (mane)

50g White Chocolate for Decorating
Recipe:
- Add the honey into a saucepan and bring it to medium-high heat for around 4-5 minutes. When it starts to simmer, turn down the heat to low, add your butter.
- When it reaches a golden amber color, turn down the heat and let it cool down.
- In another bowl, pour in your caramelized honey and butter and add in the egg.
- Stir until combined, then add your dry ingredients and keep stirring till you reach a doughy consistency.
- Cut the dough into two and roll out your dough, using a dough-roller, by placing it between 2 pieces of parchment paper.
- The dough should be around 0.5 cm thick
- Place the rolled out dough into the freezer for around 30 minutes.
- Preheat your oven to 170 °C fan.
- After 30 minutes it’s time to cut out your gingerbread cookies using your Christmas cookie cutters!
- Remove the upper parchment paper sheet, and carefully press down the form into the cookie dough.
- Place your cookies on a baking tray with parchment paper and bake in the oven for around 7-8 minutes. Repeat the process.
- Let the cookies cool down completely before decorating! I used melted white chocolate in a mini piping bag to decorate my gingerbread men! 🎄
