Recipe: Feel Good Honey Gingerbread Cookies

Ingredients:

  • 170g Almond Flour
  • 50g All Purpose Flour
  • 50g Softened Butter
  • 100g Organic Honey
  • 1 Egg
  • 1 tsp Baking Powder
  • 1/3 tsp Salt
  • 1.5-2 tsp Cinnamon
  • 1/3 tsp Nutmeg
  • 1/2 tsp Ground Ginger
  • 1/3 tsp Cardamom
  • 2 scoops of holi (mane)
  • 50g White Chocolate for Decorating

Recipe:

  1. Add the honey into a saucepan and bring it to medium-high heat for around 4-5 minutes. When it starts to simmer, turn down the heat to low, add your butter.
  2. When it reaches a golden amber color, turn down the heat and let it cool down.
  3. In another bowl, pour in your caramelized honey and butter and add in the egg.
  4. Stir until combined, then add your dry ingredients and keep stirring till you reach a doughy consistency.
  5. Cut the dough into two and roll out your dough, using a dough-roller, by placing it between 2 pieces of parchment paper.
  6. The dough should be around 0.5 cm thick
  7. Place the rolled out dough into the freezer for around 30 minutes.
  8. Preheat your oven to 170 °C fan.
  9. After 30 minutes it’s time to cut out your gingerbread cookies using your Christmas cookie cutters!
  10. Remove the upper parchment paper sheet, and carefully press down the form into the cookie dough.
  11. Place your cookies on a baking tray with parchment paper and bake in the oven for around 7-8 minutes. Repeat the process.
  12. Let the cookies cool down completely before decorating! I used melted white chocolate in a mini piping bag to decorate my gingerbread men!  🎄
